Ingredients :
Pastry :
2 cups all-purpose flour
1 tbsp granulated sugar
½ tsp salt
1 cup unsalted butter, cold and cubed
2-4 tbsp ice water
Filling :
½ cup fruit preserves or jam (strawberry, blueberry, or your favorite flavor)
Icing :
1 cup powdered sugar
2 tbsp milk
½ tsp vanilla extract
Sprinkles (optional)
Instructions :
1. Make the Dough :
In a large bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and cut into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.
Add ice water 1 tablespoon at a time, mixing until the dough just comes together.
Divide the dough in half, shape into disks, wrap in plastic wrap, and chill for 1 hour.
2. Assemble the Pop Tarts :
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Roll out the dough into two ⅛-inch thick rectangles. Cut each into 8 smaller rectangles (16 total).
Place a spoonful of fruit preserves in the center of 8 rectangles. Top with the remaining rectangles and crimp the edges with a fork to seal. Use a toothpick to poke small holes on top for steam to escape.
3. Bake the Pop Tarts :
Bake for 20-25 minutes or until golden brown. Let cool completely on a wire rack.
4. Make the Icing :
In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. Once the pop tarts have cooled, drizzle with icing and add sprinkles if desired.
5. Serve :
